Selle Italia Turbo.
I've actually only got two (which is fewer than the number of bikes) and one's well and truly shelled out but it's on my mtb. I just love those saddles but they don't make 'em anymore.
Nashbar had them marked down to $22. I knew it was an inventory clearance sale. I bought one (thus the second) and I kept wondering if I should get more. Always had more immediate needs, ya know? Well I looked yesterday. They're all gone. It makes me sad.
Now I'm going to be one of those people who wanders from LBS to LBS forlornly asking if they have that one specific thing in their NOS. No? Ok. Do you know anyone who would? No? Ok. Thanks.

Old raliegh parts. I love those little metal wheels for the shifter cable, the little D-shaped washers, the sturmy-archer hub, the dyno-hubs....Sigh.

I can't get over how beautiful the Surly 1x1 Torsion Bar is. It's 4130 steel made by Nitto. The curves are perfect and the color is hard to describe... it's silverish steel but not like any kind of steel I've seen. Love it.

Dunno that I favor any particular item, but "bling-bling" parts that are well made *and* look good are always a bonus. Phil Wood hubs and Chris King headsets probably top that list.
Even though it was a ridiculous expenditure, I'm rather fond of the bontrager Race-X-Lite carbon post that I splurged on when I discovered the seatpost from the prior frame wouldn't fit the IRO.
As for stuff that's not necessarily "sexy" but works damn well, I gotta put in a good word for eggbeaters and frogs. Frogs on the SS MTB, eggbeaters on the fixie. The geared roadie gets the speedplay "lollipop" pedals (X-somethingorother, the original ones without all that new-fangled "adustable float" b.s.)

Have you seen Cane Creeks' new aero road levers? I got a set 'cause they reminded me of Campy's carbon model, 'cept they were only $35. Nice & fat, with q/r on the lever!
