Trek 520 size
Hello, I'm Italian.
I would like to buy a trek 520 but I'm not sure for the size for me. I have an xl cube xms100 mtb (61 cm top tube length) and it fits well for me.
My measures are:
182 cm height
91 cm inseam (very heigh)
The trek520 sizes are:
57 -- 173-180 -- 81-85
60 -- 184-191 -- 86-90

you are comparing a mountain bike with mtb bars with a dropbar bike, so as you must not have a dropbar bike, I would highly recommend riding some borrowed bikes with dropbars so that you can get some reference measurements to compare the 520 to.
dropbar handlebars are going to be more forward than mtb bars, so you cannot go with the toptube dimensions of your mountain bike.
perhaps visit some bike stores and sit on bikes, although the best would be to ride some borrowed bicycles.
If you do not have dropbar riding experience, it may be harder for you to evaluate things.

Do you have a Trek dealer to physically stand over it before you buy?
57 and 60 refer to BB axis up the seat tube length , C to C centerline of top tube C to T top of top tube..
this is a classic way to state 'Size' ...
top tube slopes, but not steeply..

I'm 186 cm tall, and I ride a size 60 (from 2017, but I believe the geometry is quite similar). I'm not sure how my inseam compares to yours, but based on height I would recommend the 57 for you. I like how my bike fits, but that's with a 90mm stem, and I would definitely not want the reach any longer. As djb points out, you can't compare the top tube to you current mtb without taking the addition reach from the rop bars + brake hoods into account - a 61 cm top tube on a touring bike like this is very long.
The best would be to try one out in a shop, or maybe try a similar model from an other brand if the Trek is not available in your area, to get a feel for how it fits.

What size did you end up getting?
I am 5'10" (178 cm) with 33" (nearly 84 cm) inseam and I have a size 57 on the way. But I would say I am towards the smaller end for that frame. I have fairly long arms at my height as well.
