Here is a site my wife and I like for making backpacking food. It would work well for packing on a bike as well. Essentially, you mix rice/pasta/instant potatoes/other carb based food with various spices and dried additives and put them in a ziplock bag. Get to camp, boil a couple of cups of water and pour it in the baggie. Wait a few minutes and you are good to go. Eat it right out of the baggie and there isn't any mess to clean up. The meals are only limited by your creativity and tastes. Much better than store-bought freeze dried and way cheaper. They also pack really well and are pretty light. Resupply at a supermarket and make up another batch if you are on extended tours. Or, if you are doing post office resupplies you could make them up ahead and have them in your resupply boxes.

The freezerbag cooking stuff is great. We have used it a couple of times on tours and the results have been great. Its really nice if everyone on your trip doesn't like the same things since it is easy to adjust to individual tastes.
