Above, my version of glorified hash browns, cooked on a canoe trip. But I cheated, I used dehydrated potatoes, not fresh as described in the link below.

My last trip I cooked my food on the way out then I ate at local restaurants on the way back. Even the mobile food vendors are a great option. Fresh fish sandwiches and haluski (a polish food) at a mobile vendor was fantastic. Lamb sandwiches at an ice cream store (go figure). Deep fried pickles and stuffed mushrooms at another place. I try to never hit the big fast food places but go to the small vendors.

A few years ago I went out of my way to stop by a specialty meat store in Blairstown, NJ. Picked up some good Polish sausage and cooked it in camp:

I try to hit the local places for breakfast and lunch and on those occasions where I don't cook dinner. Even when I do cook, I try to buy local stuff is possible. Here is penne with Amish-made sausage, red onions and canned spinach:

Protein bars are a good source of protein, as are peanut butter crackers sold pre-made and packaged. I prefer to stick with dry, packaged foods when touring to avoid carrying cooking and cleaning supplies, not to mention it minimizes trash, which is typically clean if you're not opening cans of wet, aromatic foods. Toaster pastries, snack bars, various types of crackers, cookies, etc. will all provide the necessary quantities of carbs for energy. You don't really need that much protein so protein bars can suffice, especially if you eat pizza or sandwiches regularly for lunch. I'm trying to learn about edible wild plants to add fibre and chlorophyl to the nutrients gained from carbs and protein supplements (bars).
I used to worry about what and how to cook when touring but now I devote more thought toward hygiene. I'm thinking of getting a washboard and building some kind of makeshift laundry line that extends from front to back on the bike. Stretching laundry out overhead in this way would dry the clothes while providing shade from the sun. Sorry to deviate from the topic of food here, btw. It's just I'm more concerned with eating dry food and keeping clean than I am with cooking and cleaning food gear in addition to my body and clothes.

I like Keen One Quinoa personably it is relatively quick (7-8 minutes) and damn sure tasty plus I can add all sort of dried veggies and homemade hot sauce. I also have big plans for my dehydrator so once I get that up and running I will have a ton more to post here.
I made a delicious TVP stew with Just Veggies, freeze dried onions and veggie bullion along with Mushroom Truffle Hunt blend (check places like whole Foods) and Colonel Papa's Magic Seasoning Blend (you cannot find it in stores but if you are ever my way I will whip you up a batch) It was quick to make at home, and quick to make at the campsite. You can use your favorite seasonings and D.I.Y. at home. Heck if you wanted you could add dried mashed potatoes to thicken it and add more flavor or add other dried veggies or add some fresh stuff as well.
