What's My Bianchi worth?
I am the original owner of a 1985 Bianchi Mondiale. It's nice to see that these bikes are still desirable and may be appreciating. The bottom line of course is I'd like to have an opinion on valuation, the only changes to the bike are new pedals and f/r hubs. The paint seems to be yellowing, so far I have not tried to clean or polish it any suggestions there would be appreciated

My suggestion is that you should post pictures from the drive side, and detail sufficient to assess condition if you would like value estimates

Welcome to the forums. Too bad about the hubs and pedals. I agree lots of good pics are needed to get a good value.
You need to consider whether you want to go through the hassle of helping a buyer get it shipped, might be as easy as dropping it of a bike shop or may have to drop it a bike shop then take the boxed bike to FedEx or UPS. Or just want to sell local.

Can you post some pics? There is no good way to give a value without good pics of the bike to access condition. The value could be anywhere for $200-1000 but without pics there is no way of knowing.
