Heh. We had another office pool for Wednesday's drawing. The 19 of us won a total of $19. In response to the option of each getting $1.00 or rolling it into tonight's MegaMillions drawing, "Let it ride!" is precisely what I wrote to the women who has been organizing the pools.

Dallas is cosmopolitan and only a few hours from the coast. Of course a good deal of the seafood there is fresh. This isn't the 1950s. If you eat at a Pappas seafood restaurant in Dallas, I guarantee the fish will be super fresh. Even in coastal cities much of the seafood these days comes from elsewhere. Farm-raised salmon is just one example. That isn't a local fish almost anywhere. Yet it is perfectly acceptable to enjoy on the basis of freshness.The two concepts of fresh seafood and local seafood aren't nearly as identical as they were BITD.
Let's look at this another way. New Orleans and Houston are for all practical purposes coastal towns. The local catch is obviously fresh in those places. But those local fish make up only a small percentage of all the fresh fish sold in those cities. Folks in those towns enjoy salmon, tuna, halibut, pacific snapper, Chilean sea bass and many more varieties that are flown in from other parts of the country/world. I think you are depriving yourself of a lot of enjoyment thinking that fish in Dallas wouldn't be fresh.

Another issue is that the variety of the commercial species sucks, especially the farther away you get from the coast. Fresh means local grouper, red drum, snook, etc... That's what you get at markets where guides sell... species that can't be caught in commercial quantities (esp snook... holy crap snook is yummy).

I forgot to add that I remove the saddle/seatpost assembly. I do mount them vertically. First it was in a Pontiac Vibe (Toyota Matrix Clone) and now in a BMW X3.
But for a Tri bike, I would continue with your idea of the 2x4 with a BB cradle. Only because my bars tend to get really close to the headrest and aerobars would spear you in the back of the head. Unless you mounted it in the middle and didn't mind staring at the aerobars between the two of you for the entire drive.
But I much prefer this. Let's say you go crazy and end up spending 50 bucks in materials to make it happen. Compare that to 100+ dollars for a hitch (if the vehicle doesn't have one) and 300 or so for a proper hitch mount rack. And the massive benefit of having an interior rack is no effect on MPG and increased peace of mind when you park at a food stop for a sit down meal.

I already do have a hitch mount and nice (Kuat) rack, but that gets scary at highway speeds, probably because the Prius is so aero. Going to Lubbock for Buffalo Springs was a nightmare at 75mph with the wind screaming across the prairie and the bike rack swaying. It made us nervous, no matter how thoroughly I tightened it and checked the lock. It was also like having a parachute on the back trying to rotate the car.

Fresh to you has expanded meaning. To me, I want fish that was happily swimming along just a few hours ago. In Tampa I used to know a bunch of fishing guides and would use them as the source for what I consider "fresh" (this goes for any coastal town... if you want the freshest, go talk to the sport fish guides and ask where they sell what they catch and their customers don't want to keep).

I'm gonna bet that jtaylor is basically (and I mean this in a good way) a seafood snob in the sense that a beer snob will not at all be able to enjoy something like Shiner whereas I can have a bottle or two with some good BBQ and not think twice of it. His firsthand experience has fine tuned his taste buds to be more sensitive to varying levels of freshness for fish. It happens. The rest of us slobs can go to Joe's Crab Shack.

If you want to truly know how fresh your seafood is locate and visit the wholesale market that supplies your locale.
On another note, fresh is a condition, not necessarily wholly governed by the time twixt catch to table.
Some of the more notorious sushi haunts I've patronized pay a fortune for certain species to be flown in (from Japan) within 24 hours of catch including specialized material handling, to ensure exquisite condition. You pay for it.
Nevertheless, nothing beats going down to the dock and buying direct from a boat...except for fishing and eating on the boat (or from the river...)

I picked up a client late in 2014 who was a seafood middleman who delivered to quite a few local restaurants and grocery stores. He ended up leaving as a customer shortly after since I never gave him any financials (he would never give me what I asked for!) and we wanted to much to do his tax return (he agreed to it at the initial signing!).
Anyway, the guy was screwing himself with super low margins that didn't come close to covering his overhead. Of course being tight on cash because of this he decided it would be a good idea to get one of those predatory loans that gives you a working capital loan of, say, $20,000 and then take out $35,000 over the next 120 days $291.67 per day.
He found that this was a bad idea after a few months, but they were nice enough to refinance him to get him some more working capital. I think he was into it for around $80,000 in interest/fees after 12 months.
So, that's what comes to mind when I think of fresh seafood...
