Upgrading a Crankset Compatibility
I would like to swap out a Bontrager crank and three front chain rings on a 10 speed bike with Shimano Ultegra. Will the two chainrings work or will I also need a new front derailleur? Will both 10 and 11 speed chainrings work with a 10 speed cassette rear derailleur?

Sounds to me like it should work. Just a minor FD adjustment to limit the travel.
For the most part, the front end of a drivetrain doesn't care much about the rear.
(Except in oddball cases such as an old-school 5 speed freewheel and wide chain with a narrow front dereailleur and crankset.)

Yes, you can use 11 chain rings with 9 and 10 speed drive train. The front triple derailleur should work, but the limits will need to be adjusted. 9 speed derailleurs will not work with 10 and 11 speed drive train.
