Shimano HG cassette hub...7 or 8 speed?

How can you tell without actually attempting to install the cassette? Does the presence of threads inside the freebub body indicate that it is 8-speed compatible?

The presence of the threads inside the body means it is HyperGlide compatible. It could either 7 or 8 speed. 126mm dimension across the out face of the locknuts indicates 7 speed. 130mm indicates 8, 9 or 10 speed, which are alll interchangeable, if it's a steel freehub bodies.

Or you can measure the body itself. IIRC 7s ~ 32mm, 8s ~ 36mm?. I'd have to pull one to be sure of these measurements, so someone correct me if these are wrong.

+1, this is the method to use to differentiate 7 from 8/9/10 speed freehubs.
