Would you consider something like a 50/40/26 with a 12-21 8 speed cassette?

Actually I was kind of going for duplicate gearing, in the sense that the same ratio on two different rings would feel the same. One step on the rear cassette is ideal for me, just wanted to preserve the low range with a tight 8 speed cassette while having the two larger rings serve reasonably different purposes (without the crossover point in an awkward spot). I like the 48-28 idea even better though, as it's even more of what I was after in the first place.

If you use a triple crank and don't use an outer ring, a cyclo-cross bash guard could be used to take up the space. You could also sacrifice and old chain ring and remove the teeth.

Just returned from the depths of the shop and had an idea...
So I found an old SR city/mountain bike crank set that's 48/34/28 (found on an old comfort/mountain Peugeot that was in a scrap bin with a broken frame)
Say I take the large ring and switch that to the side where the center ring goes
Add some washers/spacers on the side where the big ring was (as I'm pretty sure the bolts will need some spacing for their purchase)
Then I'd wind up with a 48/28 which would give me one heck of a single step range with a 12/21 8 speed cassette
..

Well now with a little more info I can get what your going for more of a old school wide range front race gearing. I would like that on one of my bikes if I could find a nicer crank set with that gearing at reasonable price.

I've recently set up my gravel bike with a Truvativ Elita triple running as a double.
I run a 46T outer ring in the middle position and a 30T in the granny/inner.
I left the outer space empty and used single ring chainrings.
Since I used a modern SRAM ramped/pinned outer, I had to machine a chamfer on the backside of the bolt holes and then modify the bolts with a matching bevel, so they would mount flush.
46/30 with a 11s 12-27 out back makes for a nice range of gearing, especially on gravel.
