You can point any bike down a hill and have a good time. One of the coolest little rides I've done was a fire road DH on my Dad's huffy in Malo WA. My '98 Super-V got damaged in UPS transit while I was vacationing @ my parents. I had no bike to ride, so my Dad pumped up the tires on his Huffy and sent me double-nickle down this gravel service road with his Bronco II 8 ft off my back wheel.
It was fun going that fast with my crazy Dad in the rear view.
The issue with a Trek 7000 is that it won't handle like a 21.4# Scythe. A burly/plush/slack bike will enhance your DH experience on technical terrain. The ol Trek will probably handle the DH just fine depending on how you ride it. I'm sure the majority of us throw on that ridiculous suspension'n'stuff...so we don't have to learn how to ride!
You can bolt a good Tora on there and have a good time. You would be amazed at how an inch or two of height will change the ride characteristics of a steep old bike. Add modern bump absorption to the recipe and you get a whole new riding experience.
You may enjoy it so much that you want to move into an upper end dually for more technical fun.
