Maybe I should have just given him a "time out"? There is nothing polite about repeatedly trying to foul someone on a bike up with a high speed motorized toy. He is a grown man in his 50's, not a 5 year old that needs to be schooled between right and wrong. I view it as disarming him.

I have several RC cars and they are expensive ranging from $700-$1200 a car. I always stop the vehicle whenever people are around, dont want to be responsible for hurting someone. I only do this when I need to do a quick test of the vehicle on the street, other than that, I go to race track. If this guy did this to me every time I rode by, I wouldve probably done the same and ran off with it, or throw it a 100 ft in the air and see if he can fly it!

Oh and what you did was legal? You are no better than him.
No you didn't, not even close.
All you've done is made it more dangerous for you and all the other cyclists that go down the well cycled road.
Really, would it have been that hard to try talking to him? Then if that doesnt work, try filing a police report since you know where he lives?
Try exercising some of that patience we all want motorists to have.
Sorry, I'm not giving you a high five for acting just as childish as him, and committing a crime. I'm not going to argue with you anymore either. If you want to make it more dangerous for yourself and fellow cyclists, instead of showing a little restraint and using words instead of actions go ahead. You'll probably learn eventually when you "get even" with the wrong guy.
I just found an immediate resolve.

The police are busy, they don't attend accidents under $1000 damage or there has been injury. This was not escalated to an act violence as it may have been with confrontation.

Admittedly, I laughed at this story.
IF the guy is truly a reasonable fellow, he will realize his $500 mistake and get over it.
If he is an UNREASONABLE fellow, why in the world would anyone want to confront him?
Had the OP been a kind fellow, he would have returned the car care of the police.
Sounds like the OP is a touch mean spirited but that's about the worst you can say of it.
One can worry about the future negative outcome, but perhaps it will only be that he never bothers anybody with an expensive toy again. Maybe he even SAVED a life. Ok probably not, but speculation and theory is just that.
I'm sure the complainers here are perfect angels in their own world though.

Being that it is a well cycled route, he probably already resents cyclists. That may even be his inspiration. Sorry kazuri, you and I won't agree on this one. My point is, he knows right and wrong at his age. He knows he is acting in the wrong. Criminally in fact. I just found an immediate resolve.
The problem with warfare is a lot of innocent people tend to get hurt.
Maybe you should have picked up the RC car, ridden just faster than he could run for a mile or two, tire him out to utter exhaustion, then stop and have a talk with him. Or you could have ridden just enough to drive him to utter exhaustion, then turned around and said, "I'm going to take this to the police station, and file a complaint. Your antics could have killed me."
These options would have resulted in his stopping this "game", or if not, at least there would be a record working against him in any future incidents, as happened to the misbehaving LA doctor.

I'm totally down with the OP - I probably would have just pedaled out of sight and left it a couple miles up the road upside down, but considering the fact that he actually ran it into your bike, I don't fault you for dropping it in a hole. It wasn't your fault someone filled it up with water now, is it?

You might want to give your local RCMP a call. They might be looking for you and if they catch you on your bike its going to get f'd up when they arrest you and try to shove it in the trunk or you'll be paying some 3rd party big money for transportation fees and impound lot storage charges (if they can find it)
Who knows they might think its funny as hell too
just say'n ymmv

Besides, I didn't steal anything, I just moved it off the road and out of my way.

I think a good move would have been to hold the car and say "I think we need to exchange insurance information".

If I saw an RC car while I was out on a ride, I would ask the guy to race. He was probably just trying to have a bit of fun and didn't know it wasn't appreciated since you were too chicken to tell him.
If he were to ignore your complaints, then go ahead and break the car over his teeth.

Genetics have failed me
Haha.. he had it coming and I would have done the same thing.
I have an 1:8 scale buggy and those things can go FAST! And they are about 8-10lbs heavy. Impact of such a projectile can definitely cause damage on a wheel and as a result injure the rider.

The solution was acceptable, and if the local police are noted for lack of action, then probably the most appropriate response. If, however, the local police are responsible, then dropping it off at the local PD, or even donating it to a thrift shop anonymously would have been better.
