Also, I just did a bunch of pull-ups (28) and now I'm kicking it with a utah brewed beer while the sun shines on my face.

To be blunt, unless you can stand flat footed and touch your toes your lack of flexibility and core strength are hurting the things that put your new born child in the womb. No seat is going to fully disguise the discomfort of laying forward on them for miles is causing. You may never be able to touch your toes but working toward it is a better idea than pullups if you are looking to be better at biking.

I can reach behind my feet and walk along the ground with my fingers for a few inches past my feet.. and I've always had a really strong core/body. I was a rescue swimmer in the Navy and dove for almost ten years. I have probably 10 extra pounds in my midsection but I don't think that's limiting my flexibility THAT much.

It's either my saddle, the way I'm sitting, or the padding between my saddle and I.

So you have the opposite problem, too much muscle memory and fiber that is accustomed to active use. The imaginary bubble of where the center of your power is concentrated is behind you on your back instead of slightly above your offended member as it should be on a bike.

It is a stock saddle. I think I'll try a new saddle and then re-evaluate. Is it possible the saddle is too wide?

Yes, a saddle can be too wide. you need to find a shop that has an assometer. its a pad you sit on that shows your sit bones. then they cxan measure that distance and recomend a seat. saddles are trial and error beyond this though.
