Left pocket: Food
Middle Pocket: Phone, $20, tube, valve extenders, CO2 doohickey, KMC missing link. All bound up nicely in a ziplock bag.
Right pocket: empty food wrappers (also acts as catch all for when I peel off arm warmers, jacket, cap, etc)
Saddle bag: bike multi-tool, tube, tire lever
And when I'm not racing I have this neat thing that mounts behind a bottle cage that holds up to four CO2 cartridges. I usually only take two (three total counting the one in my pocket). One for me, one for a friend, and one to prevent walking home. If we had any appreciable climbs around here I'd maybe be a little more conscious about the extra weight. Yesterday's ride was 50 miles 900 ft of elevation gain.
I've been lucky and only had three flats on the road. The first required a call home because my spare tube had a hole in it and no one had a tube with a valve long enough (hence the carrying extenders). Flats two and three happened on one ride. Had to call for a ride because enough time had passed that I got lazy and stopped carrying a second tube and valve extenders. Now I probably carry too much, but I'd rather be prepared since our rides can end up 30 miles from home and 15 miles from the closest town.

Ouch! I had 3 flats on the road up to the station on mt. Evans... Now I carry one of those super quick (fairly temporary) slime patch kits VERY small and effective. I cut one or two patches almost in half (looks like PACMAN) in case a flat happens right at the valve stem. Thanks!

I made this leather pouch-goes in middle pocket and holds phone, and plastic bag with money, old DL, and -toilet paper
'cause you never know when you might have to go.
Also carry chapstick, and a silicon squeeze tube (from REI) that I fill with hammergel from a large bottle- cheaper, and avoids those stupid little packets.

I'm of the opinion that stuff for the bike go in the seat bag on the bike and stuff for me goes in pockets. But I have one of those teenie weenie fizik saddle bags that clip onto the fizik saddle. I like it because it is so small, but there's only room for a spare tube, patch kit and multi-tool. So where do I put the CO2 pump? If I carried a pump, I would attach that to the bike, thus keeping to my rule, but to put the co2 pump and cartridge in my pocket feels wrong and a violation. Sometimes when I'm riding I start thinking about it.

a number of years ago, I was riding a trail with my sons. out of nowhere, a pit bull jumped for my son's face, bu ended up hanging off of his armpit. (hate the dog, not the breed?) I dismounted, dispatched that dog with my Glock 27, and held the POS owner at gunpoint on the ground, til the on duty police arrived. he was pretty compliant when I used my police call sign when I cell phoned dispatch. I don't usually carry now that I am retired, but respect those that do feel the need to carry.
