Well, since you ask, I'd probably go with either a black or white saddle and tape, and I'd tape the bars a little further up. Something like this:

And maybe you could polish up the stem? The matte/chrome look is just a bit off to me.

Yeah i was out and about a little tonight, give me a shout next time we can actually meet in person haha. I'm usually out for a good ride atleast 3 4 times a week, we should go out sometime.
