Circus gears
Can't seem to find any relevant information.
But these bikes are fixed gear, so worth a shot here:

Any idea what those gear ratios would be?

Those Germans pretty much dominate!
Tried to find a nice big pic of a bike, but this is the best I could find,a pretty good shot of one of Ines Brunn's bikes. Upside-down steel road bars. Zero Rake fork. And I reckon that must be a unicycle saddle.

this is a significant sport overseas. i have NO doubt that those bars and saddle (and everything else) are MADE for artistic cycling, not pulled out of some parts bin at their local co-op.

Yes it is.
You're probably right. The bars the woman in the white jersey is rolling are definitely AC-specific, there were never any road bars with that bend, and her saddle also, for sure. Those stems surely aren't going to be found on any old bikes. I still think Anna's saddle is a unicycle saddle and those bars totally look like they're off an old gaspipe 10-speed but I've been wrong before.
These are still possible ideas for a beginner-in-America's first AC bike build.

Those saddles are designed to be mounted on a beam type post for greater fore/aft adjustment, but i guess the biggest obstacle for a diy is the 0mm rake fork and steep HT angle for tight turning while tracking solid.
