He said to say that we have FCR3s, not FCR1s. I guess the FCR3 has a stronger fork?
We are thinking of trying out one of each of the below racks. It seems like it's really a question of personal preference (since we don't need to carry more than a days water with us).

We traded in our 5-man car camping gear for a 2-man North Face Tadpole that weighs about 5lbs packed and our bivys are also ultra-light. We don't plan to take the direct route from Cork to Galway (what would be the fun in that!?): we plan to follow the coast but I expect that we will always be on paved roads.
The racks are the last thing we have to buy. Other than that, we just need to get on our bikes! I'm primarily responsible for the planning of this trip, so I'm so worried that I've forgotten something important.

Yes--we are going to do two trips around Ireland this summer: one coming up in a few weeks never being more than 2-days ride from home in case something goes wrong and the second from Cork up the coastline to Galway. After that we are looking to cross the channel to the UK via ferry and tour over there for a bit. After that, who knows?! I hope that we can see some of the continent before moving back to the States.

those are two fine choices. According to all the photos and specs I've seen the front fork has a mid fork attachment and it's made of steel. I think you'll have an excellent basis for comparison with those two. If your forks don't have midpoint attachments you can use P-clamps or Tubus sells a two part clamp system. I put that Blackburn on my daughters mountain bike with a bunch of zip ties.
We are still undecided about which low rider to go with, the Tubus Tara or the Tubus Ergo.

I know what you mean. We did our grocery shopping on the bikes last week. I knew I had my (rear) panniers pretty loaded, so I put the back wheel on the scale when I got home. 59.5 lbs! After dragging that over a (granted, small) mountain, I hope I'm ready for this tour!
