Gently rolling is a gentle lie. There will be suffering on those hills.
So, "what the hell" were you thinking? You were thinking that you were looking forward to a year of TT practice on painful, endless climbs. And to a year of running hill sprints, long descents (for running form of course), and "gently rolling" hills on your LSD runs.
I think it's a great decision, because this high level of pain is going to do pretty remarkable things for your fitness and abilities.

Where do they do the swim?
I could handle the bike and run part, but I don't know about swimming a mile. I've done a super sprint and I think I'll make it to sprint distance next year, but that's it.

I did a half years ago, but I was truly in better shape. I feel confident that in a year I'll be able to *finish*, but I do worry a bit about the cut off times when it comes to the swim.

Get into some team/master swims this winter in a pool. Swimming is all about technique and the best way to improve is swimming in a structured session. I hated swimming and was so bored (still is boring). But I got into a regularly scheduled session and people offered advice. Now it's my strongest leg and I spend less time on it (two days a week at 1 hour each) than I do with running or cycling.

There are no major hills on the bike course. Gently rolling is an accurate description. The run course is challenging and there is one hill they call Quadzilla that you need to do twice (two laps). It's a good course, not as challenging as Oceanside or Honu.
