Bikes: Apollo fixed winter bike, Gazelle Cross, Baboe Cargo bike, Linskey Rouleur Road, Bridgestone Picnica, Tern C7, 2nd gen Strida
Yeah, cyclepaths depend on a lot on who's in there. I've found the one around Yonge and Eglinton to be pricey. I prefer sportswap across the street. Just be cautious if you buy stuff from the "summer staff". Some goombah tried to sell me shifter cable as brake cable. Although its sometimes helpful as I did get a bottom bracket faced for free
. Lots of the kids know their mtb, quite a few downhillers seem to work there. They also carry Kona (according to Kona's site) as does cycle solutions on Parliament (although Kona doesn't seem to be listed on cycle solutions site -- better call ahead).
Dalwhinnie? Sorry, I'm an Islay man myself. I find Dalwhinnie a bit too Speyside for my tastes. I like 'em peaty and smokey.

If you do get pulled over, don't beak off. Yes sir, no sir, three bags full sir is the order of the day. I've been let off blowing two reds by being contrite and apologetic. Getting up the nose of Toronto's finest is never a good idea. I've found them almost always ready to cut slack, but getting surley will get you bent over.
