That's the issue with jalapeños. They don't taste that great and they are not spicy. Pointless unless you can't handle spicy food.

In Houston we get a wide Scoville range in all of our chiles. I imagine the different regions where they are grown may provide different results. Even serranos can be from bland to really rough.

Yes with peppers there is always some luck involved. Even some poblanos, when not properly cleaned, can be insanely spicy.

Jalapenos can vary a lot in heat...that's why you want to pick the older ones with the striations/lines, they pack quite a bit more heat than the perfectly shiny green and smooth immature peppers.

...and Jalapenos definitely have a different flavor than Serrano.

I tend to make my guac' cool and my salsa nuclear...so Jalapeno in the guac and Serrano or Habanero in the salsas...

Sure. That's because they are moving toward the ripe state used to smoke-dry for chipotles. Much hotter than immature jalapenos.

That's sooooo cheap... Chiles run me $8.99 a pound, Cilantro is $2 a bunch...btw, if you can't get cilantro try Ngo Gai...

You should try Taquitos De Tuetano... (Marrow tacos!!!)

It's a real problem having our anniversary on Valentine's Day. Whenever it is near or on the weekend we're always fighting the crowded restaurants, dealing with fixed menus many places. This year (46) we're invoking a couple of crowd avoidance maneuvers. On the 12th we'll have the Friday 3" pork chop lunch special at Perry's Steakhouse (brined, smoked, roasted all for $13.95 with taters). Finish up the day with an early movie and then dessert. Then we will wait 'til Monday night after all the hoopla is over to go out to celebrate over dinner.

Mrs. LAJ was making salsa one Sunday, and I assumed she left me a little taste on the counter. There was a bowl, and chips, so I dug in. The minute I took a bite, I realized my mistake. It was the Ghost mixture she used to "cut" the mild salsa, as she makes different levels of heat in a big batch. That was torture for about half an hour. Otherwise, her salsa is delicious.

I can never not get cilantro and its rarely more than $0.50 a bunch. This is California, after all.
