Whole roasted duck is more time-consuming and only really feeds 2-3 people. But it's tasty enough to be worth the effort.

Well, I do know that there are some big-time duck production on Long Island, so that might be a big part of the availability difference, east vs west coast.

Granted I am no farmer but apparently ducks make very good farm animals, provided we are talking traditional farming. As in, you get more product out of your investment. If you are going full industrial though, things probably change.

Depends on how you like it. Either underdone or overdone. You generally don't eat duck just "done". It is too tough that way. So you either eat it seared rare and sliced thin like the breast or moist-roasted whole for 2.5-3 hours. Then you crisp the skin at the end. When seared, the meat is juicy and tender like good beef. When long roasted the meat becomes very tender. For a 5 lb duck you can expect as much as two cups of duck fat to render off the skin during roasting. This can be poured off, refrigerated, and used as a superior schmaltz, especially if you have onions around the duck in the bottom of the roasting pan.

Everywhere we have lived we have been able to find 5 lb ducks frozen in the standard supermarkets. Here in Houston you can get them fresh at the Asian markets much cheaper. Win-win.

Ah, gotcha. Yeah, I know that the fat in waterfowl can be tricky to deal with for the inexperienced, but I've never even considered cooking one myself. I think that I've probably had goose or duck maybe 4 or 5 occasions in my life.

What is the point of discussing news when it isn't news anymore? I say you get two chances to see a race on TV, morning and evening and then it is open season. You have to hold up your end of the deal too.

OMG we were away for the last two episodes and couldn't watch until we got home. Had to totally limit our contact with the outside world, it was stressful.

Excellent with shoestring fries or a rice pilaf containing almonds and raisins, dried cranberries or dried cherries. I would bet that sweet potato fries would be outstanding with duck. The two most popular sauces are cherry and orange, both of which are wonderful. The best part of the orange dish is telling folks you had duck a l'oraaaannnnge (fake French accent/family joke).

Ha, I would imagine. Facebook, twitter, etc are *horrible* if you're trying to avoid GoT spoilers, but it's so bad that you know the deal - if you haven't watched yet and you're trying to avoid spoilers, it's all on you for even logging in.

I'll say this: I was too stunned with the first watching of the 'hold the door' scene, but that **** brought tears to my eyes on subsequent viewings. Really good season, overall. Only 10 more months or so for the next season - woo! Of course, if GRRM could hurry up and spit out the next book, that would be a welcome surprise.
