We did try the soapy water. He also put in some sealant. Said it felt very close, but it just wouldn't go. They did have one of those Spec air blast deals - I was tempted to have him "demo" it, but I bit my tongue.

I think I mentioned our new place is in the middle of "Little Vietnam", such as it is for Richmond. We have 3 cash-only delis within walking distance that have highly regarded bahn mis for very reasonable prices. One is 2 for $5. Gon'get fat.

I'm never gonna tubeless anything. Tempted to get a REALLY olde car so I can run tubes in that realm too.

I need some 2 for $5 Banh mi action!!! There are none for any price in Rock Springs, AFAIK

I have found the more that I do my own cooking, I tend to lean toward Asian food 90% of the time. I love rice and some simple veggies and meat. There is an awesome place in Dallas that does Vietnamese food on the cheap and it was always amazing. My mom had the Bahn Mi and said it was good, but I dig on rice so much, I never did try it.

On the philly steak side, I enjoy a fatty sandwich/burger more than I should and the more I cook for myself, the more I wonder how Americans get food so wrong all the time. Everything is carbs and fat and grease and sugar. Not saying my diet is perfect (far from it), but it does boggle my mind from time to time when I compare the two cultures.

While on the trainer this morning I watched a "Chef's Table" (netflix series) about a Korean monk who is now an acclaimed chef for making "monastery food". It's all vegetarian and supremely fresh and simple. Lots of fermenting and flash frying in sesame oil, looked absolutely delicious.

I don't even average a cheese steak a year. But when I do have one, it's usually from a top notch place that uses good meat, like this place:


John's Roast Pork


Steaks are amazing. Roast pork with sharp provolone and spinach is even better. You sit outside at tables with a chemical plan right across the street. Great ambiance.


There is actually a coffee shop around the corner from my house that makes really good bahn mi.
