Honestly, this is one reason I'm giving up on tubeless. I LOVE the Bontrager TLR system because when everything is brand new, setup is a breeze. Then when I went to replace the tires and set up another tubeless set, I found out after futzing with the rear wheel for like an hour at the shop that the plastic rim strip had deformed around the holes for the spoke nipples and it *just* intersected with the bead of the tire. I had to replace what I thought was a permanent solution to get the tires bead again.
I will go that route down the line for a CX/gravel type setup, but I don't think I want to fuss with it on road ever again.

Your LBS guy probably did this, but try spraying some soapy water around the bead, to help slow the rush of air.
Another trick for really stubborn tires is to use shaving cream around the bead. We've only ever had to resort to shaving cream with stubborn fat bike tires.

No offense to @indyfabz but I'd go with a bahn mi over a philly steak 10 out of 10 times, assuming they're both made well and the bahn mi has a filling I like, aka meat.
I think I mentioned our new place is in the middle of "Little Vietnam", such as it is for Richmond. We have 3 cash-only delis within walking distance that have highly regarded bahn mis for very reasonable prices. One is 2 for $5. Gon'get fat.

On the philly steak side, I enjoy a fatty sandwich/burger more than I should and the more I cook for myself, the more I wonder how Americans get food so wrong all the time. Everything is carbs and fat and grease and sugar. Not saying my diet is perfect (far from it), but it does boggle my mind from time to time when I compare the two cultures.

I have found the more that I do my own cooking, I tend to lean toward Asian food 90% of the time. I love rice and some simple veggies and meat. There is an awesome place in Dallas that does Vietnamese food on the cheap and it was always amazing. My mom had the Bahn Mi and said it was good, but I dig on rice so much, I never did try it.

Steaks are amazing. Roast pork with sharp provolone and spinach is even better. You sit outside at tables with a chemical plan right across the street. Great ambiance.
There is actually a coffee shop around the corner from my house that makes really good bahn mi.
