I liked the old cages, but I love it with the new ones. All that remains is to crop the steerer.

I'm torn on cutting the steerer. I like the idea of having the ability to raise the bars for endurance rides; I have a charity century coming up and I'd like to be able to adjust the fit accordingly.

Leaving up to 10mm of spacers above the stem would not look too bad and would give you some room for adjustments. For really long rides you can always flip the stem up. It's up to you, of course, but I think having that much steerer tube sticking above the stem not only looks bad, but is not too safe either.
