Also, the angle of your upper body will affect what muscles are used when pedalling as it will change the angle of your hips.

But yes, the knee banging was the issue, but like I said I don't think it'd happen

Actually i didn't think about that when i flipped the bars, but now that i cut off the ends all is fine. Even turning the bars to the max they only barely touch the knee when it's at its furthest position, so in the real world i don't think i'll ever hit my knee. Anyway here a few pics.

those handlebars actually came out pretty nice. now you need bar end brake levers.

i want to build a bike like that in the near future for campus commuting but with bar end shifters and gears. the addition of fenders was a good move.
