Grilled chicken salad last night was very tasty. The salad contained mixed baby greens, radicchio, fennel bulb, and red onion. The dressing was the same as the marinade for the chicken: olive oil, balsamic vinegar, lots of fresh thyme, and homemade olivada.

Tonight I made pork chops smothered in the cranberry sauce I described earlier (I made another batch). With that was brussels sprouts rendered into leaves sautéed in butter, garlic, and olive oil along with pistachio nuts. I also had some left over rapini that i sautéed in olive oil with red pepper flakes and anchovy paste. A decent quality California Pinot Noir complimented the food.

I make good martinis, but to my mind martinis are gin drinks. Vodka has nothing to do with real martinis. The worst gin I ever use is Bombay. I have Sapphire in the freezer right now. Hendricks is great. Plymouth is also a treat.
My wife likes Cosmopolitans. I make them as well. You don't need really great citron vodka, but you do need really good cranberry juice. Spend your $'s there.
I also make wonderful margaritas. They are always 100% agave tequila. Don't go too good on the tequila because it will be a waste. Really great tequila should be taken straight and sipped. FYI Patron is not great tequila; it is margarita quality tequila. After that the second most important thing is fresh lime juice. I spent one weekend perfecting the recipe. It is a good thing that I took notes.
I also make a good "Caucasian" if you get the "Big Lebowsky" reference. That one takes zero skilz.

I'm still at work so we ordered out. Put our order in at 6 food is still not here...it's getting comped but doesn't change the fact that I won't be eating till 9pm or so....I hate going to bed on a full stomach.

Earlier today I made some sautéed brussels sprouts and shallots with pine nuts finished in whipping creme and marjoram. I made them early because they are really great to reheat and they are labor intensive. My freakin' dog ate the the whole batch when I wasn't looking. F!
Wife is coming home soon to ribeye steak broiled in a panko/stilton/flat leaf parsley coating with a side of garlic mashed Yukon Gold potatoes with chives. No brussels sprouts, though.

Started Christmas dinner prep. Made the dried apricot/prune/apple/onion/shallot/port/butter stuffing for the "bone in" pork loin roast. I made this last year and got many requests for an encore.

My wife just made a few loaves of persimmon bread. She went light on the cranberries and walnuts because of the kids, but I'm going to ask her to make the next batch with just enough bread to hold the fruit and nuts together. Delicious.

Lot's of stuff prepped and ready to go for Christmas dinner. Fortunately two of the three labor intensive dishes can have most of the work done well ahead of the meal. Brussels sprouts simmered in chicken broth with sautéed shallots, butter, pine nuts, whipping creme and marjoram is cooked and in the frig. This dish reheats magnificently! Pork loin roast stuffed with prune/apricot/apple stuffing and wrapped in bacon is also in the frig. I need to take this out about 2:30 to warm up for roasting.
The pearled barley risotto with mushrooms will have to wait until the last minute. My wife is making that. We will probably squabble over burners while I'm working on the sauce for the pork roast.
