I don't know what the average highs are in central TX but if it is 50º, I'd take it for the riding. Florida sucks for biking for the most part.

There are just way too many people who like to live in these totally isolated suburbs that have nothing but houses and restaurants and then think they can jump on 35, no problem.

If you plan properly, when you move to any city, you should be looking for commutes that don't involve big highways or interstates. That's just doing it wrong.

My wife just looked up the avg. lows and highs for New Braunfels and January was the coldest with lows 38 and highs of 61. I could take that.

On the other hand, recent winters had polar vortices with 20-degree temperatures every week. It's not typically a straight 61/38.

Florida ain't all that bad in the summer, working out in the field at our job sites has acclimated me, and I ride at noon if that is when I can go out. The 90/90 days can get kind of damp, though.

Born and raised here, never knew anything different, save Parris Island for a short bit. Not that that means anything. Its home, house is fairly new, lot is 2 acres, out in the country/rural area. I'll be here till I check out. Where ever you go, there you are.

Keep in mind it is very unusual to have 90/90 days where both highs occur at the same time. Almost unheard of. The high humidity occurs in the morning when the temperature is lower, and the high temperature occurs in the afternoon and drives down the relative humidity. Not that 90 deg F with 70% relative humidity is fun, but it isn't quite what you are suggesting.
