Sorry to hear that you lost a really nice bike. But how is your riding it (or not) related to someone stealing it - just curious.

A couple of comments (I am the OP here in case you lost track).
Regarding the doctor I have had more than one conversation with my GP and we have decided to do nothing at this point. I take Meloxicam daily for an unrelated knee (and wrist) issue and this really doesn't affect my daily life at this point (since I don't have to throw a baseball from third to first base-that would be hard). Golf is no problem at all, BTW.
I am pretty happy with the strap the front and load from the front solution. I could do some garage rearrangement (it is admittedly a mess). But this should work (see pic).
I had considered the fork/headset/stem path just on general principles. Somehow that felt like the point at which this was some other bike. Like I said I like this bike and don't even want to know if I would like another more (he said with his head deep into the sand).

The bike that was stolen was a violation and unsettling, so I wish it had never happened. I feel differently about where we live.
But - I made money on the deal - straight up and told the adjuster that. That is just how the policy goes - old gets replaced by new, or their calculated depreciated value. It is a good policy that we've paid them 20X our claims over the last decades. Nothing approaching a scam is here, just choices.
I don't race, my kid does. But I have as good as I want for him and good enough for me. I can get bikes below cost using my kid's price (I'm upfront, I just get that price). I could buy, then sell, but I don't want the hassle.
But...we got our bikes. I ride - slowly, he rides fast.
So, I am at a loss of not having a bike and I have $2400.
Or
I buy what I want at my discount, sell my existing and insurance company will give the difference (I likely would not hit the cap), but I'll be out that $2,400 plus $500 deductible. So maths aside I can get any bike for a cost to me of about $2,900 - then sell mine, maybe.

Ha - the bike is gone now. I have invited local BF folks to try wheels etc. And they say they might and then don't.
It is not that weird. Lots of the juniors travel and borrow bikes to race etc. It was common when junior was here to have some cyclist need to borrow a bike. Similarly he would travel and use one of theirs.

Five months ago I finally got a new total right shoulder joint due to many years of bone on bone. More than 3 years ago the shoulder ortho categorized the degree of degradation as beyond severe. Even with limited movement and the pain, I was able to hang my bikes from the the rear wheel by grabbing the seat tube and head tube, rotating the bike on the front tire then pushing up with right hand not even reaching shoulder height.

spend $2500 get and a trek emonda sl6. the price is reasonable for what you get - a 16 pound bike that weight weenies would drool over
not to mention a light bike is MUCH MUCH MUCH easier on the knees/other joints in the legs. try a 16 pound bike and you will see what i mean.

At age 70 I no longer create reasons to do stuff. Of course I mull things over and consider things like money and time but I'm very happy to do something just because I want to. Currently I ride either an AL Masi Gran Criterium (about 12 yrs. old) or a Guru steel road bike. Last year I bought myself a Colnago World Cup CX for my 70th birthday. I am totally happy with my bikes, in fact I can honestly say I love them all. But, I do jones for a DeRosa Age (steel). If I ever get enough disposable cash I will buy one. What the hell, why not?

Not so much. Chinabomb frame, self-built carbon tubular wheels from generic parts, SRAM Red and cockpit off eBay. Should be doable for $4000. My light builds have been in that range.

my wallet is hurting now but i plan to get carbon wheels + handlebars for my sl6... .i'd be happy in the 14lb range but im not a serious biker or anything of the sort. just thought it would be cool to have something that light hah
