Road Cycling “It is by riding a bicycle that you learn the contours of a country best, since you have to sweat up the hills and coast down them. Thus you remember them as they actually are, while in a motor car only a high hill impresses you, and you have no such accurate remembrance of country you have driven through as you gain by riding a bicycle.” -- Ernest Hemingway

I'm a huge breakfast fan (currently making some challah french toast), but boiled eggs, done right, can be quite good. If you're making them any other way, try this next time - put the eggs in the pan, fill with cold water, about 1" higher than the eggs. Bring to a boil on high, as soon as it boils, turn off the heat, cover with a tight-fitting lid and let it rest for 9 minutes. After the 9 minutes is done, lift the eggs out and transfer to a bowl full of cold water. I usually crack the shells at this point, it seems to help with peeling. This will get you nice, non-rubbery whites and yolks that aren't overcooked - still bright, yellow and flavorful without that greenish hue around the outside.

...okay, back to bikes, or whatever this thread is about.

I tried an egg boiler for the first time today, my mom gave it to me last week. I'm amazed at how good of a boiled egg it makes.

They make egg boilers? Weird. I'm always amazed by how many people have rice cookers in their homes these days. I'll really flip a lid if I start seeing egg boilers everywhere.

WhyFi's technique really works well. Just say no to green yolks.

OK, I need to get a couple eggs going now... I'm thinking two soft boiled with some potatoes fried in olive oil and grits.
