I did not get involved with the previous biscuit wars, but I do prefer pastry flour for my biscuits, pie crusts, and pastry. I find that it makes them more airy and I can cut in extra butter or lard.

Yes, I have been known to use lard in my biscuit making

One of my coworker's grandparents owned a bakery (the grandfather died and took many recipes to the grave) and she brings in the most amazing baked goods. Today it was peanut butter cookies.

Ok, first of all while you all were poking me with a stick over flour, I was off reviving a stuporous Yorkie puppy (low blood sugar) and talking to a guy about why the uncontrolled heart arrhythmias, dramatic weight loss, anemia, and low albumin (a blood protein) all trumped the two seizures that his dog had, only to have him not believe me and walk out the front door. That's always a great feeling, watching them walk out and knowing they are going to die. Well, the truth is that dog is going to die anyway, but maybe less badly if I got involved.
