i'll recommend the full flat grind Delica. easy to sharpen (i use the unglazed ring on the bottom of my coffee mug) and unless you get the knife bug, probably the last knife you'll ever need.

I own an 8000 grit stone and a few ceramic honing rods. Also, I'm partial to a 70/30 bevel favoring the right hand.

I was a professional cook/chef for ten years. I already have the knife bug, haha. My favorite kitchen knife is a Mcusta Masanobu Seki, Damascus blade (the real kind, not the fake bull****) with an ebony handle and nickel bolster/heel. Yeah, I'm a knife nerd.

Depending on your county, you're ok.

Alameda county says you can carry one that locks under 3" if you're a minor.

Google tells me Santa Clara county doesnt have any restrictions. Anything legal is legal for minors also. that being said. I still dont have a use. other than it looks kinda cool.

A friend of mine under the age of 17 who goes to a San Jose high school, which resides in Santa Clara county, said he was suspended from school for carrying this carabiner which has a 3" blade. I don't know if there are differences between school policies and county law, but the link says one must be +18 to purchase it.

Schools are an instant no-no for minors.


My EDC knife has to abide by all Alameda county, Santa Clara county, San Jose city, and San Jose State University policies.

Which adds up to, non fixed, locking, non assisted opening, can't have a glass breaker (unless you're in the first response field), and must be under 3.95".

Thats another problem. Pretty much my entire existence right now is school and bieks. I'll probably get one when I'm older, but its just not worth the money right now. I would rather have bike parts

nice. my go to's right now are my 10" Global and a pre-war Sabatier, but i keep looking at the semi-custom patterned Japanese offerings.

ever cook with a true chisel grind?

the coffee mug thing is just for touchups on pocket knives. i keep a set of waterstones, a ceramic rod and a steel in the kitchen. i was a wanna-be chef, when i used to party with the CIA crew....
