Bradley's in Tallahassee, local landmark that has been around for a long time. Here are some more pictures since y'all are enjoying them. I was the only one with tires narrower than 32c but it was alright. There wasn't too many sand or washboard sections and I just had to pick good lines. At one point the road was flooded out and I was somehow able to cruise through the big puddles without eating **** in the mud. Bonus pic of dirty bike.
Your "dirty" bike looks remarkable clean considering the terrain.

If anything it was because my skinny tires didn't fling up much mud onto the frame, and a 5 mile stretch of pavement at the end cleaned the tires up. If you're in NC you've got ample opportunities to do something similar

Do you know of any or how to find them. Most bike shops cater to roadies and "gravel grinding" insn't really a thing here yet.

I know your state and national forests have good maps that show which roads are paved or not. Spent some time in DuPont over the summer and that place is great for riding gravel. Other than that I'd say look for rural roads and google street view them to see what the surface is like. Are there no local groups or forums centered around gravel riding? Maybe check the ride calendar on GravelCyclist.com to see if there's anything in your area.

protips:
bing maps - shows what roads are gravel/dirt/unpaved in light brown (this is the only thing bing is good for)
google maps - turn on bicycling and terrain and they will show unpaved roads in dark brown and cycling paths in dark green
open street maps - use "outdoor" or "bicycling" versions of OSM and they show all kinds of trails in differently colored dashed lines. the best way to see them is on ridewithgps
Gravel Road Maps and Biking Routes - Gravelmap - look for yellow stuff

that was one of my new buddies taking a photo of me, there was about 4 of the carbon sherbert beargrease, the winner was on one with enormous renthal risers, and i saw 1 or 2 of the purple flavor
the orange specialized fatboy was a popular one, mustve seen about 6 of those. the girls were on some cool purple/green one which i really digged the paintjob. theres one in the front center with the team lazercats kit on
the black beargrease in front of me is my friend who owns the lbs, the ****ing thing weighs 21 lbs.
fatbikes are huge in NJ, a huge number of mtbers have sold all their other mtbs and run straight up fat now. its good for them because youre either on sand or on rocks and roots, which bigass tires dont give two ****s about
a lot of those people are middle aged with money burning a hole in their pocket too so there was some expensive **** rolling around out there

brisk ride out to the old landfill to catch some views. you can see the city peeking over the trees on the right side of the second picture, almost 10 miles away.
