Road Cycling “It is by riding a bicycle that you learn the contours of a country best, since you have to sweat up the hills and coast down them. Thus you remember them as they actually are, while in a motor car only a high hill impresses you, and you have no such accurate remembrance of country you have driven through as you gain by riding a bicycle.” -- Ernest Hemingway

Woah, woah, woah, woah, hold on a minute. I was perfectly happy to read the back and forth on high end knives. Knives are cool. It's a thing. It can be an obsession/addiction of sorts. But you're telling me there are shops with produce just waiting for customers to hack into to test the knives? That seems a bit much.

Knife skills are definitely a thing. That is not to say that knife quality is unimportant, but there's a lot of technique to things, no matter what you have. Much, again, like bikes.

Call it Sora. It's good, very good for the price, but there are much better options for those who care. I picked it because it's the best general-use knife with a "normal" western-style handle, back-for-the-buck wise.

That's always the problem with hobbies. They're either expensive, or you suck at it, or both. So while I always say I don't need another expensive hobby, I should probably add that I don't need another thing to suck at.

So I should have bought tires, but I went to the shop I used to work at to look at some and ended up buying bib shorts. I guess I'll just be really comfortable until my next flat.

Absolutely, yes, they exist.

Mind you, I get mine online, so I haven't done it. But W-S and SLT absolutely let you cut up some veggies in the store if you're looking to buy.

By the way @WhyFi I made a special trip to Aldi yesterday per your recommendation and THEY DIDN'T HAVE ANY. I'm holding you personally responsible. I freaking love those things. Got some other holiday goodies, but was much disappoint.

I don't know who that is. Sounds like a realtor. Are you buying a new home?

There is an Aldi near me. I should call ahead and see if they have Stroopwafels in stock. I trust these are the real ones, made in Holland?

I'm not choppin' like Yan Can Cook, but I'm not bad. Cutting up an apple for the kids today, I could definitely feel and see the blade depth at which it was binding up, so I'm not totally to blame.

I had to look around quite a bit - they weren't in the spot that I thought they'd be and wound up being on an endcap. They may not be in all of the stores just yet... or maybe they don't get shipped to all regions - dunno. In any event, if you call for them, don't ask for stroopwafels - you're only get dead air on the other end of the line. They call them 'Caramel Waffles." Package indicates that they're imported from the Netherlands. They're good.

On that note, I was chatting with the wife and I was like, "I should just go back and get a flat."
"Yeah, you should."
"Yeah, I figure they'd make good stocking stuffers and whatnot..."
"What?" she says, "You're going to share give them away? No way - keep them for us."

There's a guy on the woodworking forums that's also in to smithing - he's made some shop tools (I remember a drawknife in particular) from bike chains, too. Cool stuff.

I imagine thinly sliced veggies and some nicely cooked meat paired with some nice garnished mash tatoes and maybe a glass of dece wine. Emphasis just on the sliced veggies cuz all the knife talk etc.

Like there's a big portion of the meal's greatness resting on the plating and or style that veggies are chopped out.

Embellish for me like a Bret Easton Ellis novel please

I guess that means my little santoku henkels is a "laser" width, then? It doesn't bind all the way through the large apples I cut up every morning. Not surprisingly my little cheap knife doesn't have that spec listed anywhere...
