I mean I know what a chainring guard is for but did know why that was only covering a small portion. The vid Hothead286 posted cleared that up for me, thanks.

No. The laws of physics will keep the second strap in place even without a slot.

Ok. I'm considering switching to clips and straps because I don't ride the Earl enough to warrant using Eggbeaters. I was thinking double straps just because they feel more secure.

I've had these laminated leather straps for about 30 years now:

They actually have lasted longer than the pedals; the cage failed a couple years ago d/t erosion from my cleats, but the straps are still going strong:
