I ride in at 6:30 or so, most days I eat breakfast around 8:00, usually just a PBJ sammich or some kind of breakfast device like a cheese/sausage/egg burrito or a McMuffin. I absolutely never eat before riding, it makes me ill.

Right now I'm doing a bit of fasting and I don't eat until a small lunch at noon or so.

I mentioned this to my wife and she said that she has made these in the past with an interesting twist. First of all, she doesn't use muffin cups/paper, what she does do is grease/spray the inside of the muffin pan, takes a thin slice of ham and presses it to the bottom and sides, then fills the ham with the frittata mixture and bakes it like that: the ham becomes the "muffin cup". However, it is best that there are no holes in the ham for the egg mixture to leak out.

Someone here years ago mentioned that a PBJ sandwich is pretty much exactly the same thing as the fancy recovery bars that they sell; carbs, protein and fruit sugars. Bonus is that they cost a few cents and they're yummy. I've used them quite a bit as post ride breakfast since then.

B'fst Burrito, .. thin sliced ham & 1 egg in a warm pan then lay a flour tortilla on top.

cover and remove when cooked , roll up, and i can eat it even on the fly..

Opt:add the occasional leftover pork-fried-rice from the previous night's chinese restaurant hang out.

Are you just cutting back temporarily until you know for sure that you are lactose intolerant? If you're sure you're lactose intolerant, just buy some lactase enzyme pills for when you want dairy. Why suffer without something you like to eat, or suffer the unpleasant symptoms of eating it without taking the lactase? I highly recommend Kirkland (Costco house brand) Lactase Fast Act tablets. They work the best of anything I have tried.

No stupid at all. I hate the gym because it bores me to tears but I've been backpacking 35 years because I love it. The only thing that gets me on the bike is because it is fun. When I was a kid I'd beg, borrow and steal for gas so I could go water skiing. So......today I work out more than anybody I know but wild buffaloes couldn't force a sit-up out of me. I am addicted to sunshine.

When backpacking and I'm about to make a serious push I sit, eat one simple Natures Valley honey and oats granola bar and 15 minutes later I can pull like a herd of D9 Cats.....for about 45 minutes.

No biggy.
I work 12 hours a day and I'm single AND I commute by bike. I have no time to prepare anything significant in the AM but by the time I near work I am starving. The place I work in runs 110mph all day long. I pound down something to keep me steaming until the smoke clears late afternoon. Then I eat raw vegetables and fruit. At home at night I eat next to nothing. My regiment dictates I eat big in the mornings. I came to this thread to see what the others are doing. I'd love to find something easy and filling that didn't have much grease in it but....my point to you is that not only is my cholesterol good, blood pressure good and blood sugar good but I weigh 168 pounds and at 53 years old I can still march from the bottom of the Grand Canyon to the top with a 45 pound pack before the sun goes down. I almost don't dare change the routine.

Yeah I hear ya, if its your only big meal of the day the fat and grease is what's keeping you going. Only "crappy foods" have such a high density of calories, except for maybe nuts. I eat almonds a lot. They are very high in calories and really easy to eat on the go.

I am a slow poke in the morning. Get up at 5:45 and out the house at 6:30... and don't have time to have breakfast in those 45 minutes (what DO I do in that time? Don't know, it's all blurry).
My coffee maker has a timer, so it's ready when I roll out of bed. I usually have some kefir and coffee and I am out of the apartment. I have a 30 minute leisurely riding type of commute but I need something in my stomach or I get grumpy.
At work I eat whatever sounded goo to pack the night before... bagel and cream cheese, oatmeal (more in winter), breakfast cereal, muffins... my breakfast is usually sweet... but I will try some fritatas now that I saw that on here. NOMM NOMM
