Favorite cheese would be a tie between a really sharp Vermont cheddar, or a nice chunk from a wheel of high quality Parmigiano-Reggiano (the real stuff).

What exactly is a cheese curd? I know about generic "curds" as being the protein precipitate from milk that is formed into blocks of cheese, but not the specific Wisconsin food item, cheese curd. Please explain.
