People learn "standard" rules of grammar and spelling in kind of the same way. Sometimes it helps, communication is clearer and you spend less time thinking about how you should write or say something, you can do it automatically.
But thinking "You all should really visit sometime" is definitively absolutely more correct than "Y'all should really visit sometime" because that's what the rules of modern usage dictate is incorrect IMO. They both serve the primary purpose of language, which is communication. Just like a regular fork is every bit as effective when trying to eat lobster as a lobster fork is. It might have been sacrilege in certain circles in 1895 to eat lobster with a regular fork but nowadays we manage just fine doing it. Customs evolve over time too.
I'm not saying people should be slovenly with language by any means, it's easier if there's some modicum of consistency in the way people approach it in any given era. But nor do we need to be rigidly Victorian in our usage because the truth is some of the rules we cherish right now are going to be long forgotten a hundred years from now anyway.

Shrug. I disagree. Also, laziness and ignorance in grammar usually correlate with laziness and ignorance in other aspects of life. My coworkers who capitalize and punctuate in IM chats are also the ones who do the best work. I know this is an unpopular position these days but I really, truly, do not care.

1. The fire is 5% contained, up to 5000 acres. Evacuation orders have all been lifted. 47 downed trees in town.
2. The dog toys came. Huge hit. The meerkats, pandas, and mice were wrapped in plastic, so those will be the gifts for Phoenix's dog relatives. The bunnies and monkeys were unwrapped. Bunnies-in-a-carrot went to Doglet because she is tiny and monkeys-in-a-banana went to puppy because she acts like a monkey sometimes. Huge hit, I have SQUEAK SQUEAK SQUEAK in stereo in my living room right now. But they are already trying to steal each others toys. Doglet got the carrot stuck on her head once and I had to extricate her, she was going to run into something.
3. Mr H is having fun at the auto show.
4. Strange. No one wants to ride tomorrow at 5am in 50 degree temps with 25 mph winds. I might spend an hour on my bunny hop skills instead of a road ride.

Much of what you're getting at, but didn't explicitly say, is the difference between informal spoken English and the rules for written English. That's key. Printing is the driving force behind standardization (rules). Before Gutenberg, language was all over the map. I assume people communicated well enough in their daily lives, but they didn't have rules.
As for your fork illustration, that gets more at style than rules. It's possible to eat a meal with one fork. And it's possible to write in a simple, but grammatically-correct, manner without a bunch of poetic flourishes. Think Strunk and White.

I disagree. It's like Victorian silverware. Most of the rules of usage, grammar and spelling, are made up cultural rules. Victorians learned how to use 12 different kind of forks, not because they were more effective at getting people fed but in large part because knowing all the forks was a status symbol.

Truth be known, I had and loved the original Chrysler Sebring, built there. But there was a quality issue. The product wasn’t on the level of the Japanese big three. And I had driven that car to the park for a bike ride the day I had my heart attack. Funny what you remember.

I have had an unopened pint container of prickly pear sorbet in the freezer for about two weeks. It's a lovely shade of pink and so far I've been admiring that aspect. I suppose I should eat it at some point. I'm surprised LoP hasn't eaten it to prevent it from becoming old.
